Lime Crunch Parfait

My mom made these for us when we were growing up as a special treat.  She had pretty parfait glasses. I don’t so I usually make a sundae with them, but these were made for friends so I made them in canning jars, put on the lids and froze them until it was time to take them over.  Great lime taste mixed with the smooth vanilla ice cream and then the surprising crunchiness make this a perfect dessert for special dinners.

Lime Crunch Parfait

Lime Crunch Topping Ingredients

  • 2 Tbls. Butter, melted
  • 2 tsp. grated Lime peel
  • 2 cups Rice Chex
  • 1/4 cup Sugar

Lime Syrup Ingredients

  • 1/2 cup Sugar
  • 1/8 tsp. Salt
  • 4 tsp. Cornstarch
  • 3/4 cup Water
  • 1/4 cup fresh Lime juice
  • 3-4 drops green Food Coloring
  • 1 1/2 tsp. butter
  • 1 tsp. grated lime peel
  • Vanilla Ice Cream

Steps:

Combine butter and lime peel in a skillet over low heat, until melted.  Add rice chex and sprinkle sugar over the top.  Cook over low heat, mixing for 5 minutes.  Cool on paper towels, then crush. I put them in a zip lock bag and crush by hand.

Combine sugar, salt and cornstarch in a small saucepan. add water, lime juice and food coloring, heat over low heat and boil for 3 minutes.  Add butter and lime peel, then cool.

To assemble, put a scoop of ice cream in a parfait glass, drizzle syrup over followed by the lime crunch topping, then repeat.  Put in freezer to set.

Update:

Just made these again for my mom and family. So good for a summer treat.
